The ultimate comfort food from chef James Strawbridge – creamy potato salad, greens and deliciously garlicky Better Naked Kyivs.
1. Preheat your oven to 200˚C and bake the Better Naked Kyivs for 20 minutes. While they are baking in the oven boil baby potatoes in salted water for 15-20 mins until soft.
2. Toss the boiled potatoes in mayo with half of the chopped herbs.
3. For the asparagus, cook in a pan with melted butter and lemon zest for 3-4 mins, then toss in the remaining herbs and finish with a pinch of sea salt.
4. Serve the baked Kyiv with warm potato salad and tender asparagus.
