This plant-based Irish Stew was part of a series of vegan recipes created by James Strawbridge using our delicious Better Naked Bacon ‘without the oink’.
Fry off carrots, celery and onions in olive oil for 5-10 mins until the onions start to caramelise.
Add the potatoes, bay and parsley, then season before covering with stock and Guinness.
Separately fry off the rashers for 2-3 mins, turning frequently, then roughly chop before adding to the stew.
Serve with a garnish of parsley.
