To make this nourishing and filling bacon and lentil soup recipe, firstly, sauté the following in an oiled pan for 2 mins – celery stick, onion, red pepper, Naked Bacon.
Next stir in tomato puree, smoked paprika and cayenne pepper. Then add carrots, lentils, stock and tinned tomatoes, and simmer until lentils are cooked. Finally. add a large handful of frozen peas.
Season with salt and pepper.
Once heated through, serve the bacon and lentil soup with a garnish of basil leaves, large croutons (chunks of bread drizzled in olive oil and baked in the oven) and finish with ribbons of crispy Naked Bacon!
